Nicaragua El Zapote Honey
**All local pick up orders will remain available for 30 days. After 30 days they will be donated to a local charity due to storage space.**
This is a honey processed micro-lot from our friend Luis Alberto Balladarez. We've been purchasing micro-lots from him for 9 years now! Hailing from his farm, La Bendicion, the area known as El Zapote is planted with plants of the pacamara variety. Luis loves the way this variety shines when he honey and natural processes it, and we do too! We usually buy at least one of each of these delicious coffees.
Luis allows the cherries to ripen after being picked for almost a full day, almost like you'd do with bananas, before depulping. After depulping the coffee is slowly dried under covered raised beds for nearly a whole month before being milled. The result of this slow and even dry is a highly articulate acidity, rich jammy or dried fruits, and layers of sweetness with a velvety body. We call this flavor profile sessionable, because it is the kind you can keep drinking and never grow tired of!
