Un Regalo de Dios Natural

This wonderful coffee comes to us from our friend Luis Balladarez.  It was grown and carefully hand picked on his farm, Un Regalo de Dios.  The coffee from this farm yields some of the most prized coffees from across the globe.

Luis takes care to have his pickers not only select ripe cherry, he has a two tier gradation of ripe cherry and requests his pickers to have a majority of maroon hued ripe cherry, which has the better sweetness.  He then floats the cherry and density separates them so that only the most ripe and dense cherries make it into the lot.

Luis has created a large canopy with several tiers of African raised beds that ensure that his natural lots take sometimes near a month to be fully dried, hulled, and rested in parchment.  This is substantially longer than usual- and they are carefully monitored for moisture activity and percentage all the while.

Marcellesa, a hybrid of the Sarchimor and Caturra, is a unique variety and the first we have featured on our shelves.  Cultivated in Nicaragua for its hardiness, marcellesa is particularly resistant to leaf rust - a disease that thwarts coffee farmers far beyond the borders of Nicaragua.  It is also able to weather harsh rain and winds without detriment to the coffee cherries during harvest season.

Here we celebrate a win for the farmer in deploying a hearty new variety that will help keep his farm healthy, and a win for us in a tasty cup.
