This coffee hails from Minas Gerais, Brazil's largest coffee producing state. The region has large rivers, mountains, and cooler weather which is a recipe for thriving coffee!
Fazenda Sertão is the name of the 850-hectare farm where this coffee was grown. The coffee farm was founded by Jose Isidro Pereira who was among the first generation of coffee growers in Minas Gerais. Jose was a dentist by trade but inherited Fazenda Sertão from his mother. This changed his life trajectory, ending his career as a dentist, and setting him on a path to producing coffee. His beloved wife Nazareth continues his work today along with their 4 children: Francisco, Luiz Paulo, Clycia, and Sandra.
For this coffee, they used a processing method called anaerobic fermentation. The process consists of placing freshly-harvested cherries inside a sealed container for a period of time in order to impact flavor– increased acidity, body, and fruitiness.
