Kenya Jimbo AA
Uteuzi Jimbo is Swahili for "county select.” This coffee was sourced to specifically highlight the western coffee-growing region in Kenya. Though traceable down to the region, this coffee is a blend of several lots from different factories in the area. The lots used here were sorted based on their similarities in quality and flavor profile. The varieties represented in this coffee are Batian, SL28, SL34, and Ruiru 11.
In Kenya, coffee is produced by smallholder farmers and then delivered to central processing factories that almost exclusively produce washed coffees. The washed process in Kenya most often has a soaking step which is unique to the country. This last step in the coffee’s processing occurs after the washing step. During this stage in the processing, the coffee is submerged underwater for 12-72 hours. It is then spread out onto raised beds to dry.
The “AA” classification refers to how the coffee was sorted. AA is the largest coffee and AB is slightly smaller in size (like in our Limited Release #93). Though the AA often sells at a higher premium, the quality of the coffee isn’t correlated with the size.
Fun Fact: Regional variables such as wind patterns, soil quality, sunlight, elevation, and other environmental influencers have much to do with the common characteristics that separate one region from another. There can be just as many distinctive characteristics between a Northern Colombian and a Southern Colombian coffee as there are between a Colombian and a Kenyan.
