We are always so impressed at the micro-lots we are offered by Luis Alberto Balladarez. We are offered many coffees from Luis these days, enough options to offer 1-2 choices all year long - but there aren't two that are ever alike! Each small, curated lot has the glowing peculiarities that the particular variety, processing method, and terroir from one of his six farms displays from a given day's worth of ripe cherry picking.
This is from Luis's farm Lo Prometido, the farm that sits at the highest elevation and a high degree of shade. The fascinating part about this coffee is that it is a separation of one of the most common varieties in Nicaragua- Catuai. This variety is the very careful breeding of some of the finest of both side's of arabica's family tree- selected to produce good cup quality and a fine quantity of cherries.
This particular micro-lot has a great amount of chocolate and caramel along with apple and some expressive fruitiness that really sets it apart from the other catuai coffees we have had from him this year.
