Peru Victor Hugo

This is a micro-lot from Cajamarca, Peru- a remote area in the north among the Andes Mountains. This is the handiwork of Victor Hugo Cabreras Dias, who has been producing coffee for 8 years- but has worked in coffee his whole working life. He owns a small 1.5 hectare farm called "Yerba Buena" and is a part of the cooperative called Santuario that unites producers from the surrounding communities to provide logistical support for getting their coffee to market at a premium price.
At such high elevations, and selecting the high quality varieties of caturra and bourbon, Victor ensures that only ripe cherry is depulped, washed after a 24-36 hour soak, and dried evenly on raised beds for 8-15 days.
In the Cup
The result is an amazing coffee full of dried fruit, the sweetness of a butter cookie, and an indulgent spiced cocoa texture and finish.
