Limited Release Tea Espirito Santo Cascara
You might be asking why we are presenting a tea in our Limited Release box. Though our cascara is prepared as a tea, it can also be categorized as a coffee. While the coffee we all love is the seed of the coffee plant, cascara is the skin of that same coffee seed. In fact, in Spanish cascara simply means peel or skin. Most often the skin is removed as the coffee is processed.
Fazenda Camocim has chosen to take a holistic approach to coffee production and use the cascara. This farm lies in Espirito Santo, Brazil and is part of Café Bio Project. In addition to employing organic practices, they aim to support “bio self-sufficiency.” The farm is intended to have a natural ecosystem which is self-sustaining. It’s no surprise that they treat the coffee plant in a holistic way using both the seed and its skin, or its cascara.
In the cup, the cascara imparts the characteristics of the dried coffee cherry. It is prepared like a tea by steeping the skins in hot water. The flavor that comes from steeping the cascara is sweet and tangy, like dried fruit.
