This beautiful coffee is the handiwork of Elvis Rafael, a producer from Jaén, Peru. We sourced this through Red Fox Coffee Merchants, who maintain a direct and personal relationship with him. It's not too often that you get a chance to buy coffee from Elvis, so we had to jump on this one as soon as we saw it!
His farm, El Diamante, sits at an incredibly high elevation of 1750-1900 MASL. He plants bourbon, caturra, and catuai which are all high quality varieties and has a very dialed in processing method approach.
Elvis has found that he gets incredible results by keeping the ripe coffee in the cherry for 12 hours before beginning his washed process. He soaks the seeds for a full day and then drying for around two weeks. The result is a much brighter and fruitier Peruvian coffee than we usually find - with tropical fruit acidity!
