Jhon Fredy Chavez has been producing coffee in the Pitalito Bajo community for 20 years. His farm, Los Chiguacos, has an area of 4 hectares and is situated in a privileged position with road access. Jhon grows varieties such as Castilla and Pink Bourbon alongside banana trees. After the coffee is harvested, it is taken to be processed in cement tanks for a 15-17 hour fermentation. It is then dried on patios on raised beds for 8-12 days. 

Pitalito Bajo is a small community in the district of El Tablón de Gómez, Nariño. Coffee has profoundly impacted this region for good and is now one of the most well known coffee growing areas in Columbia. Since coffee was introduced here, agricultural practices have improved. All coffee producers here are committed to preserving a part of their land as untouched forest and leave native plants untouched where waterways originate. Outside of protected areas, livestock are free-range which in-turn contributes to the ecosystem. With the ecological well being at the heart of these sustainable practices, the community’s financial wellbeing has improved as well.
