Guatemala Los Chorros

Finca Los Chorros is located in the town of San Pedro Necta. This area is part of the Huehuetenango department of Guatemala which is well known for its quality coffee. This region boasts the highest peaks in the Sierra de los Cuchumatanes mountain range which yields an ideal climate for cultivating coffee.
Virgilio Martínez, owner of Finca Los Chorros, grows several coffee varieties including Bourbon, Caturra, and Catuai. Martínez desires to make advancements on his farm through improved use of technology while also learning new production techniques.
Like many other Guatemalan farmers, Martínez is setting himself apart by his processing methods. His coffee cherries are picked and depulped the same day. He then dry ferments the coffee between 24-38 hours. The coffee is then washed and taken to dry on patios between 3-6 days. The fermentation and drying times are highly dependent on the variable weather patterns in this area.
