This is the coffee of Honoratio Aparicio Vasquez, a member of a coffee producer group called Yosonicaje, a small community in the region of Mixteca in Oaxaca, Mexico. They pool resources but maintain a more desirable degree of independence that allows them to negotiate higher pricing for quality lots. Señor Vasquez's coffee was separated for quality and awarded a handsome premium. His coffee is grown at 1700-1900 MASL.
He allowed his ripe cherries to be depulped and dry fermented for 18-24 hours. After a thorough wash, he dried the seeds for around two weeks. We were floored at how much articulated sweetness we found in this cup, and we think you're really going to love it. It tastes like a birthday cake!
