Our dear friend Luis Alberto Balladarez has outdone himself this harvest. He is always experimenting and refining his processes, and it shows the most in the delicious flavors of his pacamara micro-lots. Pacamara is a hybrid coffee variety. Part pacas, a natural variant of bourbón coffee, which is excpetionally high quality, and the giant coffee plant, maragogipe- a variant of typica coffee. Combined they make a variety that at its best is some of the finest in the world.

Every year the pacamara has gotten better on Luis's farms. This year the variety accounted for most of our highest scoring lots. The reason for this is Luis's intentionality and his untiring curiosity. He is always adjusting processing methods, ripeness when picking, and the rate of drying to see where each coffee shines the most.

This year, La Hacienda the micro-lot was especially delicious, from Luis's first farm La Bendicion. The coffee is balanced, filled with complexity, and rich with sweetness. We feel like it will be a crowd favorite for being both comfortingly sweet and ripe with fresh fruit flavor.
