Pacamara is a large bean cultivar, a cross between Maragogype and Pacas with unique flavor properties. Our friend, Luis Alberto Balladarez has been planting a lot of this varietal among his farms, and it has consistently produced some of the most unique and enjoyable flavor profiles of all of his coffees.
This varietal has a very unique expression with Luis' care and precision in processing. Usually this varietal exhibits noticeable vegetal qualities along with the complexity - not so with this coffee. It's clean, balanced and really sweet.
This lot of Pacamara comes to us from Finca La Bendicion, which is located outside of Jalapa, Nicaragua, very close to the Honduran border. Incidentally, Jalapa is where the Jardin del Niños orphanage farm is located that we have helped with some irrigation and infrastructure investments. So we are actually able to buy coffee from within a matter of kilometers from where some of the coffee profits have been invested.
In the Cup
This coffee is juicy, with orange, strawberries, mangos, a creamy body, and a candy-like sweetness.
