Carabello Coffee
Amarillo Natural
Carabello Coffee has been in relationship with Luis Alberto Balladarez for far over a decade. Justin first discovered Luis when he read about him winning the Cup of Excellence in 2011. Little did Justin know that he would be meeting Luis in person shortly after and would be forming a friendship that would last for years to come.
Finca Un Regalo de Dios is truly a pride and joy for Luis. The farm’s name means “Gift from God” and is divided into several plots based on altitude. Luis is meticulous with his lot separations and each one has subtle variations.
This is the last lot of yellow (amarillo) catuai that we purchased from Luis was back in 2019. Needless to say, we are thrilled to be able to share this again! The yellow catuai varietal is a mutation of the red catuai which ripens early in the harvest season. The coffee cherry is picked when the skin of the fruit is golden-yellow. It tends to be thinner skinned, slightly smaller, and more delicate in its fruitiness than the red.
For those who want to know more about the varietal, click on the link and read below for more: Yellow Catuai, or Catuai Amarillo, is an early-ripening mutation of Red Catuai, harvested at the yellow cherry stage. The name comes from its golden-yellow cherry coloration at optimal harvest time. Cherries appear lemon-yellow when ripe and have thinner skin than the red variant. Beans are slightly smaller, ranging from 14-16 screen size, with pale greenish-yellow parchment.
In the Cup: Delicate, Orange, Tropical Fruit, Butter Cake, Creamy
