Luis owns several farms and each one is unique in terroir. The farm Lo Prometido sits at 1600 meters above sea level and is nestled within the mountains along the Mozonte municipality. It is a cool and shaded farm that produces slow growing, high quality coffee. Lo Prometido is one of his newest farms and is treated as a proving ground for innovation. Here he grows several varieties and experiments with growing, harvesting, and processing practices. 

This Java Honey is a nano-lot from Luis Balladarez’s finca Lo Prometido. Tended and harvested with the utmost care, nano-lots come from a very specific area of a single farm. The small harvest from one of Luis’s nano-lots yields a coffee that is incredibly unique, identifiable, and high quality. 

The Java variety found in Nicaragua has an interesting history. Unsurprisingly, the variety’s origin story begins on the Indonesian Island of Java. In the early 1800’s, the Dutch brought this coffee to Java from Ethiopia. Because this variety is resistant to coffee berry disease, it began traveling around the world to be cultivated. The variety landed in Central America in 1991 but wasn’t widely grown in Central America until it was recognized that the variety thrived in the region’s higher altitudes.
