Carabello Coffee

Sumatra Tano Batak

$8

This coffee comes from the Lintong and Dolok Sanggul regions of Sumatra, an island in Indonesia. They border Lake Toba, a large lake that occupies the caldera of the Toba supervolcano. In this area, coffee is farmed between 1400-1550 MASL which is the highest coffee growing altitude in all of North Sumatra.

Collected directly from smallholder farmers and weekly village markets, this coffee is the collaborative effort of six coffee collectors. Once procured, it is wet hulled and then dried in greenhouses. When the coffee reaches the ideal moisture of around 11-12%, it is run over densimetric tables and then hand sorted for additional quality control. In order to maintain the highest quality, each lot is processed separately as microlots. The varieties that make up this particular lot are Ateng, Catimor, Jember, and Typica.

In the Cup: Cedar, Earthy, Dark Chocolate, Tart Cranberry, Heavy Body, Lingering Finish
